For Maple Butter

For Waffles

For Glazed Bacon

  1. Heat oven to 225°F. Make maple butter: In small bowl, combine butter, syrup, and Tabasco sauce; set aside.
  2. Make waffles: Preheat waffle maker. In large bowl, whisk together flour, baking powder, baking soda, and salt. 
  3.  In medium bowl, whisk buttermilk, eggs, sugar, oil, and vanilla. Add buttermilk mixture to flour mixture. Stir until just combined (small lumps are OK).
  4. Spray waffle maker with nonstick cooking spray. Add 1/2 cup batter to waffle maker and cook until golden brown and crisp, 2 to 5 min. Keep warm by placing directly onto oven rack. Repeat with remaining batter. 
  5. Make glazed bacon: Combine syrup and Tabasco sauce. In large cast-iron skillet on medium, cook bacon until crisp, 5 to 6 minutes. Drain on paper towels; let cool, then break into pieces.
  6. Wipe out skillet; return to medium heat. Cook pecans, tossing occasionally, until just beginning to brown, about 2 minutes. Toss with bacon, then drizzle with syrup mixture and toss to coat. Transfer to bowl and let cool. 
  7. Serve hot waffles with maple butter, sliced bananas, and bacon pecans.
